Of course, this dessert delicacy is perfectly grand when enjoyed by itself.

Want to turn it into travel-friendly bars? Double the amount of granola and cacao nibs, and triple the amount of chocolate and oil. Melt the chocolate and oil as directed in the instructions below and then stir all of the ingredients together instead of drizzling, then pack tightly into a deep baking pan, and finally chill until set before cutting into symmetrical bars.

How to make Tigernut Granola Tripple Chocolate (Step by step Recipe)

  1. Roughly chop the dark chocolate and cacao nibs separately and set the cacao nibs aside.
  2. Spread the Tigernut Granola onto a large baking sheet lined with parchment paper.
  3. In a microwave safe bowl combine the dark chocolate and the coconut oil, then microwave in ten second increments, stirring vigorously between each segment, until the mixture is completely melted and incorporated. If you do not wish to use a microwave, a double boiler is another great option for melting together. Stir constantly until the chocolate and oil have melted into one liquid.
  4. Allow the mixture to cool but not to set. It should still be warm when ready to use but not hot enough to melt plastic or burn your hands.
  5. While the chocolate is cooling, prepare a piping bag or sealable plastic bag by resting the tip or corner in the bottom of a tall glass and pulling the opening around the mouth of the glass.
  6. Spoon or ladle the melted chocolate mixture into the bag, taking care not to spill any on yourself (it could still be hot!).
  7. Cut the tip from the piping bag or the corner from the plastic bag. Keep the opening as small as possible while still allowing the chocolate to flow through — ⅛ of an inch should be enough, but feel free to trim more if the chocolate does not flow well. Be careful not to trim too much or the chocolate will flow in large ribbons and run out of the bag before you’ve finished using it.
  8. Starting in one corner of the pan, apply light, constant pressure to the bag and drizzle half of the chocolate from one edge to the other in a steady manner until you have coated the entire area of the granola in chocolate stripes. Gently set the bag back into the glass. The tip should be resting directly on the bottom to stop the flow of chocolate.
  9. Immediately after drizzling the chocolate, sprinkle half of the cacao nibs evenly over the granola so that it sticks to the drizzle.
  10. Cool for 5 minutes in the freezer until the drizzle is set.
  11. Once set, remove the pan from the freezer and flip the granola over using a spatula or a flat spoon.
  12. Repeat steps 8-10.
  13. Once all of the chocolate is set, you can start enjoying your triple chocolate granola right away!
