Ingredients
- ½ cup Natureul Tigernut Butter
- 1 cup gluten free or regular flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- ¼ cup neutral oil (coconut or avocado work best!), melted
- 1 teaspoon vanilla extract
- Optional: cinnamon and nutmeg
Instructions
- Prehead the oven to 350℉ and line a baking sheet with parchment paper.
- In a medium bowl, combine the flour, salt, baking soda, and any additional spices if you’re opting for those.
- In a separate bowl, combine the oil, vanilla extract, and the tigernut butter and stir until completely combined.
- Add the wet ingredients to the dry ingredients and stir until combined.
- Using ½ teaspoon scoops, roll the mixture into small balls. They don’t have to be the exact same, just similar. Place them on the lined baking sheet.
- Bake in the oven for 12-15 minutes, until the balls have firmed up and started to brown around the edges. They should be much drier than the original mixture.
- Allow them to cool completely, then scoop into a bowl or divide between two bowls and top with your milk of choice! Enjoy!
