SEPRA USA LLC

Grab your trusty silicone candy mold (in a cup shape for best results) to make these delicious vegan chocolate tigernut cups! These incredibly decadent candies are like a healthy homemade version of Reese’s cups and are great for satisfying candy cravings without the processed sugar.

These mimic the famous candy’s beloved grainy center by adding tigernut flour to the tigernut butter, which thickens it and makes it easier to spread in the cups as a bonus! Natureul tigernut products are free from artificial ingredients, which also sets these incredible chocolate tigernut cups apart from the store-bought version.

Prep time: 15 minutes

Total time: 35 minutes

Serving size: 2 cups (makes 20 medium cups)

Ingredients

  • 1 cup vegan dark chocolate or chocolate candy melts
  • 3 tablespoons maple syrup
  • 2 teaspoons coconut oil
  • ⅓ cup Natureul Original Tigernut Butter
  • 1 tablespoon Tigernut Flour
  • Optional: ½ teaspoon coarse or flaky salt for topping

Recipe

  1. Make the filling. Using a fork or whisk, combine the tigernut butter, maple syrup, and flour until thoroughly combined. Set aside.
  2. Using a double boiler or microwave, melt the chocolate or candy melts with the coconut oil, stirring periodically until combined and completely liquid.
  3. Carefully spoon between ½ and 1 full teaspoon of the melted chocolate mixture into each silicone candy cup mold, using the back of the spoon or rotating the mold to ensure that the bottom and sides of each cup are completely coated.
  4. Place the mold into the freezer for 5 minutes until the chocolate has hardened.
  5. Remove the mold from the freezer and spoon ½ teaspoons of the tigernut mixture into each cup and gently press into the cups with the back of the teaspoon to distribute it to the edges.
  6. Put the mold back into the freezer for 5 minutes.
  7. Once the centers have become slightly firm, cover the tops with more melted chocolate (it may be necessary to re-warm the chocolate) and place back into the freezer for 10 minutes until the chocolate has set completely.
  8. Unmold carefully and enjoy your healthy chocolate tigernut cups!

How to Store Vegan Chocolate Tigernut Cups

Once completely set, store the chocolate tigernut cups in an airtight container in the refrigerator for up to 10-14 days or in the freezer for up to 3 months.

Tips for Making Delicious Vegan Chocolate Tigernut Cups

Having trouble getting the cups out of the mold? First, make sure they’ve frozen long enough–then flip the tray over and gently press the center of each cup using your thumbs until the cup pops right out!

Switch up the toppings! You’re not just limited to salt. You can add sprinkles, grind up some Tigernut Granola, or use chopped raw or roasted tigernuts to create some crunch on top of these vegan chocolate tigernut cups. Not a fan of the crunch? Leave them naked!
