How to make Vegan Chocolate Tigernut Cups (Easy Recipe)

Ingredients
- 1 cup vegan dark chocolate or chocolate candy melts
- 3 tablespoons maple syrup
- 2 teaspoons coconut oil
- ⅓ cup Natureul Original Tigernut Butter
- 1 tablespoon Tigernut Flour
- Optional: ½ teaspoon coarse or flaky salt for topping
Recipe
- Make the filling. Using a fork or whisk, combine the tigernut butter, maple syrup, and flour until thoroughly combined. Set aside.
- Using a double boiler or microwave, melt the chocolate or candy melts with the coconut oil, stirring periodically until combined and completely liquid.
- Carefully spoon between ½ and 1 full teaspoon of the melted chocolate mixture into each silicone candy cup mold, using the back of the spoon or rotating the mold to ensure that the bottom and sides of each cup are completely coated.
- Place the mold into the freezer for 5 minutes until the chocolate has hardened.
- Remove the mold from the freezer and spoon ½ teaspoons of the tigernut mixture into each cup and gently press into the cups with the back of the teaspoon to distribute it to the edges.
- Put the mold back into the freezer for 5 minutes.
- Once the centers have become slightly firm, cover the tops with more melted chocolate (it may be necessary to re-warm the chocolate) and place back into the freezer for 10 minutes until the chocolate has set completely.
- Unmold carefully and enjoy your healthy chocolate tigernut cups!

Once completely set, store the chocolate tigernut cups in an airtight container in the refrigerator for up to 10-14 days or in the freezer for up to 3 months.
